Bright Leaf Smoked Spiral Sliced Holiday Ham with Apple Cider Bourbon Glaze

What's a Bright Leaf Spiral Sliced Ham?

Bright Leaf Spiral Sliced Hams are bone-in select all-natural hickory, and hardwood smoked honey-sweet ham. It has been cured in its natural juices and NOT pumped with water. Ingredients:

 

  • (1) Bright Leaf Spiral Sliced Ham
  • Honey Glaze Packet (Included with the ham)
  • Spiced Apple and Smoked Rub
  • Your Favorite Bourbon
  • Apple Cider Syrup
  • Worcestershire Sauce
  • Spicy Brown Mustard
  • Honey
  • Ground Cinnamon
  • Brown Sugar
  • Ground Ginger

Smoking the Ham

  1. Season the Bright Leaf Spiral Sliced Ham with apple cider rub and smoked rub
  2. Fire up your smoker and use briquettes and smoked cherry wood.
  3. Place the ham cut side down over indirect heat for 90 minutes between 225-250 degrees.
  4. Place the ham on your cast iron skillet and pour 1-1/2 cups of chicken stock over the ham. Cover with aluminum foil
  5. Place back on your smoker at about 325 degrees until the ham reaches an internal temp of 145 degrees.
  6. Once ham reaches over 100 degrees internal, it's time to make your Apple Cider Bourbon Glaze.
  7. When the ham reaches 145 internal temperature, pull the skillet from heat, remove the foil, and drizzle the finished glaze from over the entire ham, saving a little to the side. Place skillet in the oven on Broil at high temp for 2-3 minutes until bubbling, be careful not to burn.

Making the Apple Cider Bourbon Glaze

  1. In a small saucepan, add the glaze packet and 1-1/2 tbsp of water per the instructions.
  2. Mix and ensure all ingredients are incorporated.
  3. Add 1/3 cup of bourbon.
  4. Add 1/3 cup of apple cider syrup, 1/3 cup of honey, 2 tbsp of Worcestershire Sauce, and 1 tbsp spicy brown mustard.
  5. Add 1 tsp cinnamon, 1 tsp ground ginger, 2 tsp spiced apple cider rub, and 1 cup brown sugar.
  6. Add 1 cup of apple cider syrup and whisk all ingredients together, ensuring everything mixes well.
  7. In a small ramekin, add 2 tsp cornstarch and 2-3 tsp apple juice; whisk together; this is a thickening agent - add the mixture to saucepan.
  8. Bring to a boil, reduce heat, and allow to continue to thicken.
  9. Pour over ham generously. Save a little to the side to pour over individual pieces as well.
