Carolina Packers made BBQ history on September 6, 2025. We hosted the first-ever Bologna BBQ Championship, and teams from all over came to smoke local Bright Leaf and Curtis bologna.
This recipe comes straight from one of the teams competing — a true taste of Carolina creativity.
💥 Sweet heat. Smoky meat. Southern swagger. This ain’t your grandma’s bologna sandwich—it’s a flavor grenade built for legends.
Ingredients:
- (1) Stick of Bright Leaf HOT Bologna
- Smokin' Bones Cattle Dust Seasoning
- Cackalacky Cheerwine Sauce
- Pimento Cheese
- Candied Jalapeños
- Soft Pretzel Bun
- Crispy Fried Onions

Cooking Instructions:
- Start with a stick of 3 lb. Bright Leaf Hot Bologna and cube it into bold 1” chunks—no shy bites allowed. (bologna burnt ends)
- Hit each piece with a generous dusting of Smokin' Bones Cattle Dust seasoning. Let that flavor soak in like it means business.
- Toss those cubes into the smoker at 250°F for 2 hours, letting that smoke kiss every edge.
- Brush or toss the smoked bologna cubes with Cackalacky Cheerwine Sauce—sweet, tangy, and unmistakably Carolina.
- Crown each cube with a dollop of creamy pimento cheese, a slice of candied jalapeño, and crispy fried onions.
- Nestle it all inside a soft pretzel bun and get ready for sweet heat and smoky perfection in every bite.
