These Halloween Eyeball Skewers take a little patience, but the spooky results are worth it! Made with Bright Leaf Smoked Sausage and Bacon, mozzarella eyeballs, and olives, they’re a fun addition to your Halloween spread.
Ingredients:
- (1) Pack of 16 oz. Bright Leaf Smoked Sausage
- (1) Pack of 12 oz. Bright Leaf Bacon
- Skewers
- Black Olives
- Mozzarella Balls (Store was out of mozzarella balls, so we molded mozzarella slices into eyeballs!)

Cooking Instructions:
- Cook Bright Leaf Bacon until fully cooked but still flexible, not crispy, so it can easily wrap around the skewers without breaking. Set aside.
- Heat a drizzle of oil in a skillet over medium heat. Add the smoked sausage and cook according to the package instructions.
- Allow the sausage to cool enough to handle safely, then cut each link into 8 pieces.
- Prepare the eyeballs. Carefully cut a small circle into each mozzarella ball to make room for an olive.
- Carefully assemble the skewers. Thread one piece of smoked sausage onto a skewer, followed by a mozzarella ball with an olive inserted, then another piece of smoked sausage.
- Wrap each assembled skewer with the cooked bacon. Use toothpicks as needed to hold everything together.
