Bright Leaf Cheesy Potato Smoked Sausage Soup

Ingredients:

• 1 Pack of Bright Leaf Smoked Sausage
• 2 Medium to Large Russet Potatoes
• Bundle of Celery
• 1 Sweet Onion
• 32 oz. of Chicken Broth
• Stick of Salted or Unsalted Butter
• 1/4 Cup of Flour
• 2 Cups of Milk
• 8 oz. Pack of Shredded Cheddar Cheese
• Minced Garlic

Cooking Instructions:

1. Cut your smoked sausage in halves and sauté in your Dutch oven with olive oil. After sear, remove from the Dutch oven and set to the side.
2. Sauté your diced onion and diced celery in Dutch until they become translucent.
3. Add your diced potatoes and 32 oz. Chicken broth to your Dutch oven, bring to a boil and cook until potatoes are tender and can mash with a fork.
4. In a separate pot, let's make our Roo!
5. Melt one stick of butter, add 1/4 cup of flour whisk. Don't let that butter burn
6. Add 2 cups of milk and bring to a good simmer. 
7. Add your shredded cheese to your Roo and whisk it well, continue to whisk, reduce heat to low until you get a nice creamy texture.
8. Once your taters are good and tender, mash up a little, not completely mash but just roughed up a little, use a wooden spoon and jab them a bit.
9. Now reduce your heat to your Dutch oven, add your Roo slowly, and get a nice steady simmer.
10. Let it simmer for about 20 minutes
11. Remove from the heat
12. Remove the lid and stir every so often, allowing it to rest, rest for about 20 - 30 minutes until it thickens to your liking.
13. Enjoy!
