Bright Leaf Bologna Burnt Ends

Experience a North Carolina BBQ tradition with a twist—Bright Leaf Bologna Burnt Ends! These smoky, sweet, and tangy bites bring the flavor of classic burnt ends to life using iconic Bright Leaf Bologna, perfect for honoring the state’s barbecue heritage in a whole new way.

 

Ingredients:

 

  • (1) 3 lb. Stick of Bright Leaf Bologna
  • Killer Hogs BBQ Rub (or your favorite BBQ rub)
  • 6 Cubes of Butter
  • Bone Suckin' Sauce Hot Honey
  • Bone Suckin' Sauce BBQ Sauce
  • Bone Suckin' Sauce Mustard

 

Cooking Instructions:

 

  1. Cut Bright Leaf bologna into 1-inch squares
  2. Place the bologna squares in a pan.
  3. Add Bone Suckin' Sauce Mustard and mix well to coat.
  4. Sprinkle with Kill Hogs BBQ Rub (or your preferred BBQ rub) until evenly coated.
  5. Place the seasoned bologna squares on a smoker grate or cooking rack.
  6. Smoke at 250°F for 45 minutes (hickory wood recommended).
  7. Remove the bologna from the smoker and transfer to an aluminum pan.
  8. Add six cubes of butter, Bone Suckin' Sauce Hot Honey, and BBQ Sauce to the pan.
  9. Cover the pan with aluminum foil and return to the smoker.
  10. Smoke for an additional 45 minutes.
  11. Remove from the smoker, uncover, and enjoy your delicious smoked bologna bites!
