Heat oil in a large skillet, then add the chopped onion and garlic.
Peel and cube the potatoes. The smaller the cube the less cooking time.
Add salt and pepper to season accordingly to your taste.
Turn the potatoes every few minutes till they are browned on all sides.
Slice the smoked sausage into about 1 inch pieces and add to the pan.
Cover then stir every few minutes.
Continue to turn sausage, potatoes and onions, scraping the nice brown bits in the pan.
Meal is done when potatoes are brown and tender and the sausage is a nice brown color.
